Pan Seared Albacore

Cut the belly flap off and cook it separately- this makes pan searing it easier with only 3 sides to sear.

 

Coat the albacore loin with olive oil and then season with salt and pepper. 

 

Mix poppy seeds and sesame seeds on a plate and press the albacore loin into the seeds making a heavy coating of seeds on all 3 sides of the loin. Pan sear for maybe a minute or slightly more on each side.  Cut up after it is seared with a sharp knife. 

 

Make a dipping sauce with soy, wasabi, ginger and sesame oil- you can also add pepper and /or red chili flakes.
