What is Khmer food?

Khmer or Cambodia cuisine is probably one of the lesser known of Asian Cuisines. Cambodia is in Southeast Asian with Thailand and Vietnam as its neighbors. 

Over the years, both Vietnamese and Thai dishes have gained popularity with American palates but yet Cambodian cuisine has remained relatively obscure to the average person. 

Cambodian foods have taken on characteristics of its neighbors; but it does have its own unique flavor profiles. Those foods like Vietnamese Bahn Mi or Pho have been adapted using elements of traditional Cambodian cooking like black pepper and fermented sauces. 

Years ago, a friend and I were in the kitchen together, and she taught me this simple sauce that would be common in Khmer cuisine, but we used it on black cod. 

Khmer Style Black is oven baked then served with a Khmer style sauce that is a savory sweet and salt combination.

The sauce is balance of sweet from the rock sugar and salty from the fish sauce. The shallots deepen the flavor and the vinegar gives it a mild tang.

When preparing the sauce, you do want to make sure it thickens a bit, you won't want it running off the fish. In true Cambodian style, you'll want to serve this dish over rice.

Ingredients:
  • 4 Black Cod portions
  • 1/4 tsp Salt; +/- to taste
  • 1/4 tsp Ground Black Pepper; +/- to taste
  • Olive Oil
   Khmer Sauce
  • 2 tbsp shallots; minced
  • 2 tbsp fish sauce
  • 2 tbsp water
  • 2 tbsp rice wine vinegar
  • 3-1" rock sugar or 3 tbsp white sugar
  • 1 tbsp olive oil
Directions:
  • Pre-heat oven to 450 degrees F.
  • Season the Black Cod with salt and pepper.  
  • Drizzle olive oil on a oven safe pan or cast iron skillet.
  • Over medium-high hear, sear the black cod, seasoned side down for 3 minutes, allowing it to form a crust.
  • Flip over, placing the black cod skin side down.
  • Bake 17- 20 minutes or until the internal temperature is 145 degrees F. (The fish should be lightly browned and the flesh should start to separate.)
  • While the fish cooks, add the 1 tbsp olive oil to a heated sauce ban.
  • Once the sauce pan is warm, sauté the shallots until they begin to soften, about 3 minutes.
  • Add the remaining sauce ingredients over a medium-high heat.
  • Bring all the ingredients to a high simmer until the rock sugar melts. 
  • Once the rock sugar has melted, reduce heat to medium-low and allow the sauce to reduce and thicken to the desired consistency. 
  • Serve over rice, drizzling the sauce over the black cod.
