Recipe: Sake Kasu Black Cod

Ingredients

  • 2 black cod portions
  • 7 1/5 tbsp – Sake Kasu (Don’t have to be super exact with the 1/5 tbsp)
  • 3 1/5 tbsp – White Miso Paste
  • 2 tbsp – Sugar
  • dash – Soy Sauce (add more for a sour taste)
  • dash – Mirin (add more for a sweeter taste)
Marinade Directions:
  • Mix the Sake Kasu, White Miso, Sugar, Soy Sauce, and Mirin in a bowl :

Ingredients

  • 1 teaspoon salt
  • 1 teaspoon minced fresh thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon sweet paprika
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon fennel seeds, crushed
  • 4 6-ounce black cod fillets
  • Oil (enough to evenly cover top of fish and bottom of skillet)

Summary: Black Cod marinated in Orange-Ginger-Soy  sauce, grilled or baked

Ingredients

In a 9×9 (for 4 portions) or 9×13 (for more servings) pyrex cake pan combine the following :Black Cod Marinade

  • Soy
  • Honey
  • Sesame Oil
  • OJ
  • Lime
  • Diced Ginger
  • Diced Hot Peppers
  • Ginger Juice
  • Green Onion
  • Diced Shallots

Marinate Black Cod face down for 6 hour (or more) Marinade should cover at least half the thickness of the Black Cod portions.

Soy Ginger Black Cod

Summary: Black Cod marinated in Soy Ginger sauce, grilled or baked

Ingredients

In a 9×9 (for 4 portions) or 9×13 (for more servings) pyrex cake pan combine the following :

  • Soy Sauce (you can also use Kikoman Teryaki sauce)
  • Rice wine
  • Sesame oil
  • Brown Sugar
  • Sliced green onions-
  • Garlic
  • Ginger (I peel it and put in food processor)
  • Pepper.

Marinate Black Cod face down for 1 hour (or more) Marinade should cover at least half the thickness of the Black Cod portions.

Khmer Style Black Cod

Khmer Style Black Cod

Summary: Black Cod baked or grilled topped with Khmer drizzle

Ingredients:

  • Black Cod
  • Salt
  • Pepper
  • Shallots

Season Black Cod with salt and pepper.  Bake 17- 20 minutes @ 450 degrees- may finish off under broiler. You can also grill on medium/high heat for 16-20 minutes

The fish should be lightly browned and the flesh should start to separate.
